Walnut & Apple Cake with Caramel Sauce Recipe


This is a great tasting apple cake with walnuts and fresh apples. The cake is baked in a rectangular pan and topped with caramel sauce - you can serve it up with a scoop of vanilla ice cream too! Either way, it is delicious!
Walnut & Apple Cake with Caramel Sauce

Apple Cake Ingredients:

3 eggs, beaten
1-3/4 cup sugar
1 cup oil
1 teaspoon baking soda
1/4 teaspoon salt
1 to 2 teaspoon cinnamon
2 cups all-purpose flour
4 cups apples, peeled, cored and chopped (I used Red Delicious)
1 cup walnuts, chopped
Caramel sauce *See below for recipe

Directions:

Beat eggs and sugar for 5 minutes, or until sugar has dissolved and mixture is thick.  Keep beating and add oil, baking soda, salt and cinnamon.  Slowly add flour until batter is smooth and thick.  Stir in apples and walnuts.  Pour batter in a greased 13" x 9" pan and bake at 350 degrees for one hour.  Let cool and enjoy!

Caramel Sauce

Ingredients:

1 packed cup brown sugar
1/2 cup half-and-half
4 tbsp butter
Pinch salt
1 tbsp vanilla extract

Directions:

Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat.  Cook while whisking gently for 5 to 7 minutes, until it gets thicker.  Add vanilla and cook another minute to thicken further.  Turn off the heat, cool slightly and pour the sauce into a jar.  Refrigerate until cold.  Warm sauce, drizzle over cake and serve.
